Salad
Pick when plants are young and tender. Do not eat poke after it has bloomed and has berries. Wash thoroughly. Put in pot with enough water to cover. Boil for 5 minutes. Drain and replace with hot boiling water. Boil for an additional 5 minutes. Drain and put into heavy skillet with 6 Tablespoons bacon drippings. Add 1 finely chopped onion. Cover and simmer until onions are tender. Beat 5 eggs until foamy and scramble with greens and onion. Salt and pepper to taste. ![]() |
